what is a chef?
As a chef, you take on various interesting tasks in the hospitality industry. The scope of your responsibilities depends on the size of the establishment. In small restaurants, you handle many things yourself. For example, you design the menu with seasonal and daily specials and also purchase the ingredients. Purchasing is a responsible task: you need to pay attention to quality, shelf life, and variety. Large hotel chains therefore employ staff specifically responsible for procurement. Additionally, as a chef, you are responsible for proper storage of the goods in accordance with hygiene regulations. And of course, there is also a head chef or executive chef who ensures smooth operations through appropriate personnel planning and leadership.
The most important thing not to forget: As a chef, you prepare delicious dishes and present them attractively. For example, you are responsible for making soups, salads, sauces, meat dishes, or side dishes like pasta, rice, or rösti. Of course, desserts such as creams, ice creams, or sorbets should not be missing either. In the hot kitchen, you use various cooking methods, including grilling, braising, sautéing, or gratinating. During busy times, it can get quite hectic. Good planning and organisation help you stay calm and still get the food quickly to the table.
Chef jobs are mainly found in restaurants, hotels, and canteens, but also in hospitals, retirement homes, or, a bit more exotic, on cruise ships.

What can you expect as a chef? What are your responsibilities? To work as a chef, you need to know the following:
- As a chef, your heart beats for good food and the culinary craft. You know that good food makes people happy. You really enjoy putting together a well-balanced dish. It means a lot to you when your creations are enjoyed by guests. For that, you use the finest ingredients and prepare them with lots of love and creativity. As a chef, you’re knowledgeable about food. You know where to get quality ingredients and how to turn them into delicious dishes on the plate.
- You approach your work with great diligence. You know exactly how to store and prepare the meat to ensure no germs survive. Cleanliness is an integral part of your daily routine. As a chef, you hold high standards for yourself and your work results. With dedication, patience, and ambition, you achieve perfect outcomes for your guests. At the same time, you never forget that, as a chef, you are a team player. Everyone works together towards a common goal: satisfied guests. No wonder adrenaline often runs through your veins during your work. But that’s exactly what chefs need as their life force. In any case, you’ll never find yourself bored in the kitchen.

your area of responsibility
Depending on the restaurant you work in, as a chef you are responsible for the following tasks:
- Planning and costing menus: As a chef, you put together different dishes while taking seasonal ingredients into account. Once the menu is finalised, you calculate the cost of goods. Based on these costs, you determine the price you can charge per dish.
- Shopping and storing goods: After you've put together the menu, you as the chef buy the necessary ingredients. Top chefs often consider this step the most important. They get inspired by what's available at the market and only then plan their menu. Usually, you as the chef order the goods and have them delivered. Before storing, you check the quality of the delivery.
- Work allocation: As head chef or executive chef, you decide who does what in the kitchen. This ensures everything runs smoothly, even when things get busy.
- Mise en place: Prepare everything you can in advance without compromising on quality. Wash, chop and prepare the salad, braise the meat and cook the side dishes. Also, make sure you have all the pans, equipment, oil, herbs and spices in the right place. Good preparation ensures that dishes can be prepared quickly once they are ordered.
- Preparation: As soon as the orders arrive in the kitchen, you get started. As a garde manger, you assemble the cold dishes. As an entremetier, you take care of the soups and side dishes. As a saucier, you ensure that sauces and meat dishes are ready to be served on time. The pâtissier is responsible for the desserts. Once everything is plated, other chefs check to make sure everything is perfect. Only then does the dish leave the kitchen.
- Hygiene: Chefs are responsible for keeping the workplace clean. This involves much more than just regular cleaning of the kitchen. You also check the quality of the food and monitor its shelf life. As a chef, it’s also part of the job to follow hygiene guidelines according to HACCP. After all, guests rely on safe and hygienic food.
- Hierarchy in the workplace: In the kitchen, there’s a clear hierarchy. Everyone does the job they’re assigned to. The head chef manages the operational processes. The executive chef assigns the tasks at the stove.
-
who are your colleagues?
As a chef, you're not alone in the hospitality industry. Few other professions rely as much on teamwork. Every staff member has their role in the kitchen. Together, chefs and kitchen assistants ensure that dishes are prepared quickly and taste great. The service team then brings the plates to the guests. If the kitchen and service aren’t perfectly coordinated, you might end up with cold dishes or the wrong orders at the tables. Good teamwork, on the other hand, leads to happy guests who leave positive feedback.

salary as a chef.
how much do I earn as a chef in a permanent position?
The collective labour agreement in the Swiss hospitality industry, known as the L-GAV, sets out the working conditions and minimum wages for the entire sector. This means that minimum wages are established for chefs. These generally apply to a 42-hour workweek. Overtime is compensated either with time off or paid out. Your salary as a chef largely depends on whether you have completed vocational training. With a Federal Certificate of Competence as a chef, you earn a minimum of around 4,400 CHF per month. This translates to at least 57,000 CHF per year, based on 13 monthly salaries. With a professional diploma as a kitchen assistant, you earn about 400 CHF less, and without any formal training, roughly 800 CHF less. If you pass a professional examination according to the Vocational Training Act, your salary can rise to over 5,000 CHF per month. The higher you climb the hierarchy, the more you earn. As head chef or kitchen manager, your monthly salary typically exceeds 5,000 CHF by a good margin.
In the hospitality industry, you also benefit from fringe benefits. Meals and accommodation are often included in hotels or holiday clubs. Your employer is allowed to deduct the cost of food and lodging from your salary. However, the deductions your employer can make are lower than what you would have to pay yourself for accommodation and meals. In larger hotels and restaurants, you also receive a share of the tips.
in which industry do I earn the most as a chef?
The salaries of chefs depend on their specialization and the type of establishment. Large hotel chains pay more than small restaurants or canteens. Diet chefs earn a higher salary than canteen chefs. Well-paid chef positions can also be found in affluent private households. Seasonal businesses offer interesting earning opportunities as well.
